Almond pastas, nougats, crunchy, creams arising from the encounter of excellent raw materials with the careful craftsmanship and passion of our pastry chefs. Made with carefully selected and handcrafted almonds and pistachios, according to centuries-old recipes, handed down from generation to generation.
The Almond Pasta is one of the symbols of Sicily and is the daughter, like whole island pastry, of a centuries-long history, which crosses peoples and ages.
Just 4 ingredients: Sicilian almonds, sugar, egg white and natural Sicilian citrus flavours. And we also make them with the taste of Sicilian pistachio.
It is said that the first to bring to Sicily the custom of mixing almonds with sugar to delight their palate were the Arabs.
But the invention of this dessert is not attributed to them, in fact, tradition tells that almond paste saw the light for the first time in the Middle Ages, in the Palermo convent of Martorana, annexed to the church of Santa Maria dell’Ammiraglio. This compound wascalled also “pasta riali”, meaning Royal Pasta, to emphasize the extraordinary goodness, which was precisely worthy of a king.
Today it is officially recognized as a traditional Sicilian agri-food product
and included in the list of traditional Italian agri-food products (P.A.T) by the Ministry of Agricultural, Food and Forestry Policies.
The secret of a good almond paste, more than in the recipe, lies in the quality of the raw material used and in the wisdom of those who prepare it. Each pastry chef has his own secret making his dessert unique, so we also keep a secret which has lasted for more than 30 years.
