For almost 40 years we have been producing cannolo waffles

Made with few fresh and genuine ingredients. From the very beginning we have spent on research to perfect our waffles. Starting from the classic recipe we have studied every day to make them more and more crunchy, tasty and fragrant and to make a fragrant and tasty cannoli even the day after filling! We have invested years in research and development in order to meet the needs of the most demanding and aware consumers.

Pennisi cannoli are handmade, they are free of lard and wine, they are suitable for a vegetarian diet and the scent they emanate makes them DIFFERENT from all others.

Loved and especially exported desserts around the world. The history of the Sicilian Cannolo is somehow uncertain, but the most accredited version tells us it’s a typical dessert of the carnival period. This dessert in fact wanted to be a joke, something fun and irreverent at the same time.

As often happens with traditional Sicilian desserts, the cannolo has also undergone a series of reinterpretations and every pastry chef has given his contribution over time. Its simplicity makes it a versatile dessert full of surprises, and even if it has been the subject of various interpretations, it always refers to the oldest tradition of the island.

We prepare it in all its variations. From the maxi format, to the large, to the medium, to the small and to the (smallest) cannolicchio. In a light and dark version, glazed or not.

With the Cannoli of Sicily Pennisi,

Processing

We take care of our waffles from the selection of raw materials to their delivery

The preparation of cannoli begins with the choice of certified raw materials , carefully chosen to offer a quality product, where craftsmanship is always the most important ingredient.

All ingredients are processed in the kneader until we obtain a compact compound, which is left to rest.

This dough is then spread into thin sheets. Once the ripening time has elapsed, the sheets are then joined together to reach the ideal thickness.

From each sheet we obtain depending on the size circular or oval shapes, which are wrapped and sealed one by one by our confectioners around a metal mold with a characteristic shape.

The waffles are left to rest in an isolated environment for 24 h and are ready to be fried in certified oil.

Once cooked, they are cooled and removed by hand from the metal mold.

Finally, the waffles are ready to be packaged one by one, directly in the cartons or in the special recyclable trays, all with extreme care to arrive on your table always fresh and crunchy.
